Using metric recipes in a US kitchen
Bakers in Europe and much of the world weigh flour, sugar and butter in grams, while many American recipes and scales use ounces. To follow a metric recipe with an ounce scale, divide each gram figure by 28.35: 200 g of flour is about 7.05 oz, and 125 g of butter is about 4.41 oz.
If your scale reads only in whole or quarter ounces, round each ingredient to the nearest mark and keep the rounding the same way across the recipe. Ratios matter more than absolute weight in most baking, so consistent rounding keeps the bake balanced.
Packaged food in the US shows both units on the front, so you can check your math against the label. A 454 g bag is 16 oz, and a 340 g jar is 12 oz. When the two figures on a label disagree by more than a gram, the metric number is usually the one the package was filled to.
Do
- Weigh dry ingredients instead of converting them to cups
- Keep a few extra decimal places until the last step
Avoid
- Using fluid ounces for flour or sugar, since they measure volume
- Mixing troy ounces from a metals price into a food conversion
Where the ounce comes from
The ounce on food labels and postal scales is the avoirdupois ounce, one sixteenth of a pound. Since the 1959 agreement between the US, the UK and other Commonwealth countries, the pound has been exactly 0.45359237 kg, which pins the ounce at 28.349523125 g. NIST lists both values in Handbook 44, Appendix C.
For a full pound or more, kg to lbs is easier to read, and oz to g converts back.
