Three cups in modern kitchens
- 236.59 mLUS customary cup
- 240 mLUS nutrition label cup
- 250 mLmetric cup
US food labels round the cup to 240 mL for serving sizes, under the FDA's labeling rules. Australia, New Zealand, Canada and South Africa use a metric cup of 250 mL. The differences are small for one cup, about 1.4% between the first two and 5.7% between the first and the last, but they add up in a recipe that calls for four or five cups of liquid.
Which cup a recipe means usually follows from where it was published. An American cookbook means the customary cup, an Australian site means 250 mL, and a package label in the US means 240 mL.
Measuring cups for liquids usually carry both scales, mL on one side and cups on the other, so you can often skip the conversion entirely. Read the mark at eye level on a flat surface, since looking down at the jug makes the liquid seem higher than it is.
Cups measure volume, not weight
A cup of flour can weigh anywhere from 120 to 150 g depending on how it is scooped. For dry ingredients, weighing in grams is far more reliable than converting milliliters to cups.
Smaller amounts
For less than a quarter cup, spoons are easier to measure. Sixteen tablespoons make a US cup, so 60 mL is about 4 tablespoons; tbsp to mL and tsp to mL cover those. Liquids labeled in ounces convert on fl oz to mL.
