Moving the decimal point
Metric weights are built on powers of ten, so you never need a calculator for this step. Count three digits from the right and put the point there: 12,500 g becomes 12.5 kg. If the number has fewer than four digits, pad it with zeros first, so 45 g becomes 0.045 kg.
Recipes, nutrition labels and parcel scales often switch between the two units on the same page. A bag of flour might say 1.5 kg on the front and list a serving as 30 g on the back. Both describe the same flour; they just use the unit that keeps the number readable.
How the kilogram is defined
The kilogram is the SI base unit of mass. Since 20 May 2019 it has been fixed through the Planck constant rather than a metal cylinder kept near Paris, so the gram, one thousandth of a kilogram, is just as precisely defined. The SI Brochure published by the BIPM sets out the definition.
For conversions to US units, the kg to lbs converter and g to oz use the exact pound of 0.45359237 kg.
Postal and courier services set their price bands in kilograms or in steps of 500 g, so a parcel of 2,050 g is billed as just over 2 kg.
